Baking soda vs baking powder




I was always asked what the difference is between the two. I didn't know which I should as a baker so I did some research. Both are leaveners in batters. Baking soda needs an acidic reagent to make the bubbles rise. Baking powder already has one but needs a liquid to rise. Always to make sure that the powder or soda is in date or they won't work. Trust me it makes a difference. You can also tell when they are close to date the batter doesn't rise a lot.

Chocolate chip disaster

So I "made" chocolate chip cookies last night. They didn't come out so well. I always had trouble with chocolate chip cookies but never really anything else. At college I found a recipe that I love. It was on the back of a cheap package of chocolate chips. Unfortunately I can't find it so I tried two different recipes and they failed.
Attempt 1:



As you can see they flattened right out and stick to the pan.

Attempt 2:



Still flattened but looked a little better and was easier to get off the pan.

So I thought why is this happening. I found a website on different reasons that it could have been. So it could have been the oven, baking soda too old, greased pan (I like using parchment paper but didn't have some at the house) or the recipe. Well I tried the two recipes at the house, then to see if it was the oven I went to work and used their ovens. They didn't flattened out completely but still not a good attempt.



I will have to find the recipe. This weekend I having a baking contest against my mother on chocolate chip cookies, three different recipes are being used. I will keep this updated on who won with pictures.

Mini apple pies

Found this recipe off of Pinterest. It makes exactly 24 pies and my family and people at worked loved them. They are easier to eat and dish out then a typical pie.
The first picture show using a wide mouth mason jar lid to cut the circles and place them in the cupcake tin.



I used pre made dough.


Make the filling however you do for the holidays, just cut the apples into smaller chunks.


Make sure you also spray the pan just in case some apple juices doesn't leak out and make the pie stick.

One pie is a serving but no one ate just one. :)

Busy!!!!

So sorry I haven't written in a long time but so much has happened. I had a benefit to go to two weekends ago for a friend how got into a horrific car accident so I donated cookies to that and that week before the benefit I worked overtime and was tired at the end of the week. I haven't been baking a lot I'm trying to organize my life (not really working) and find another job. But I promise some posts in the very near future. Oh and the 3-2-1 cake we tried and made pineapple upside cake and it was very good I forgot to take a picture. I will make it again and take a picture I also found a recipe for a single cookie have to try that one. I did make a Monte Cristo (my version) which is French toast with ham turkey bacon and cheese (I used provalone). If you like sweets this is the sandwich for you.
